The Sweetest State Confections is the vision of Courtney, an award-winning confectioner and Le Cordon Bleu graduate whose chocolate journey began with her beloved shop in Colorado. After relocating to Raleigh to be closer to family, Courtney continued her culinary journey by joining North Carolina State University’s Howling Cow Creamery and Dairy Education Center, a cherished local landmark. It was there she hired Haley, then an NCSU student with a passion for flavor and creativity. The two worked side-by-side, building both a professional bond and a lasting friendship.
After a few years, Courtney felt the pull back to her true passion of crafting chocolates that tell a story, and knew she had to take Haley along for the sweet adventure! Together, she and Haley launched The Sweetest State Confections, blending Courtney’s original shop concept, in a new and unique form, with Haley’s fresh perspective to create a business as meaningful as the confections themselves.
Today, they handcraft each piece with care and dedication, bringing you flavors inspired by the rich history of each state.
Our journey began with 1492 Chocolates in Colorado, where we specialized in our award-winning gourmet truffles and bars. Inspired by Courtney’s extensive travels and fascination with how communities express unity through food, the idea of crafting chocolates that represent each State’s unique flavors was born. After graduating with the highest honors from Le Cordon Bleu Culinary College, and with the support of her family and community, Courtney founded 1492 Chocolates in 2013- bringing her vision to life with handcrafted creations that celebrated tradition and culture.
From those early days came a phrase that captured the heart of the idea, "Explore America Through Chocolate." As the journey evolved and new chapters were written, the phrase followed, growing into "Explore America Through Chocolate… and Discover Your Own Sweetest State," a gentle bridge from past to present.
Today, The Sweetest State Confections brings together the best of our chocolate-making history with a new vision: introducing handcrafted mendiants, inspired by Courtney’s classical French training and travels in France. A traditional French confection, our mendiants are a perfect blend of truffle and bar- crafted in small batches, with toppings that reflect regional flavors and seasonal flair. While our toppings and colors may contain preservatives, our custom chocolate compound blends are made without glucose syrup, high-fructose corn syrup, or added preservatives. Sourced from Italy, these unique blends offer a rich and silky cocoa flavor in every bite.
You can find us online, at local markets, boutiques, and select retail locations. We’re excited to continue delighting our customers with fresh creations and offering Custom Collections for a truly personalized experience, all thoughtfully crafted by two women with a shared dream and a love for storytelling through sweets.
Looking ahead, the focus remains on thoughtful growth, with plans to reach even more sweets enthusiasts by expanding into additional retail locations. A small shop in Raleigh is a hopeful next chapter, a dream that continues to inspire the journey, thanks to the encouragement of a loyal and growing community.
Through every new product, location, and venture, the commitment remains the same: crafting confections that connect people to a sense of place, tradition, and, of course, sweetness.
